A Healthier Halo-Halo Inspired Sundae
Inspired to try the Filipino ice cream treat but worried about calories and getting your hands on all the ingredients? Here’s a better-for-you ice cream sundae with stuff you can easily find in your local market
Halo-Halo is an amazingly sweet and satisfying way to cool down on a hot summer day. It’s name literally means “Mix-Mix”. But with ice cream, evaporated milk, flan and candied fruits and jellies, it’s definitely heavy. And unless you have easy access to an Asian grocery store, many of the ingredients aren’t so easy.
So here’s a sundae using our own Cloud & Joy healthy ice cream and fresh ingredients that captures the “spirit” of Halo-Halo. It’s still not diet food, but it will definitely reduce the ‘I shouldn’t have eaten that’ factor. For some of these ingredients, if you do have access to an Asian market, we’ll give you the real-deal swap outs at the end.
This is more of a list of goodies and assembly than cooking so it’s very easy. Let’s go!
Prep Time: 10 Minutes
Serving Size: 4 Servings
Ingredients
- ½ Cup Sweet Beans (Adzuki Beans specifically if you can get them)
- ½ Cup Shredded Coconut
- 1 large banana (sliced)
- 4 Scoops Cloud & Joy Boozy Bee Vanilla ice cream
(or other low-calorie vanilla ice cream if you must!) - ½ Cup Sliced Mangos
If you can get sliced jackfruit, also ½ cup of this - ¼ cup sweet corn kernels (or creamed corn if preferred)
- ¼ cup cornflakes (or crispy rice cereal)
Instructions
- In 4 tall glasses divide up each of the following evenly: sweet beans, banana slices, mango slices (and/or jackfruit), shredded coconut.
- Add the scoop of vanilla ice cream
- Top with the corn and cornflakes (or crispy rice cereal)
That’s It! Enjoy.
If you are up to it, here are some extra things you can do to make it a more authentic if you are feeling adventurous:
- If you can get Ube ice cream, substitute for the vanilla
- You can also optionally add shaved ice and 3–4 tablespoons of evaporated milk before topping it with the ice cream.
- Coconut gelatin (nata de coco) is also traditionally used
- Bananas can be substituted with caramelized pan-fried plantains (you need to know how to make these)
- Traditional recipes also often top the concoction with flan.
