We’ve been talking about foods that help curb your craving for sugar. So here’s an awesome recipe that uses three of our recommendations all in one! Chia seeds, Yogurt and Raspberries.
Chia pudding is all the rage now and for good reason. These little wonders are filled with nutrition and filled with protein and omega-3. Plus, they’re very filling. I took the basic chia pudding idea and adding in a smoothie topping to create a parfait style treat that can be eaten for breakfast or dessert.
Step-by-Step instructions below…
Ingredients
For the Chia Pudding
- ½ cup unsweetend almond milk (or any milk of your choice such as oat milk or dairy)
- 2½ tbsp. dry chia seeds
- 1 tbsp. goji berries
- 1 tbsp. plain Greek yogurt
For the Green Smoothie Layer
- 1 cup frozen pineapple
- 2 tbsp. almond butter
- 1 cup unsweetend almond milk (or any milk of your choice)
- 1 pitted date
- 2 handfuls of spinach
- 1 celery stalk
- ¼ cup parsley (including stems)
For the Garnish
- Raspberries
- Hemp seeds
Instructions
Make the chia pudding: Mix the almond milk (or milk of your choice) with the chia seeds and goji berries. Stir well and leave in the refigerator overnight. The next day, mix-in the yogurt for extra creaminess.
Make the green smoothie layer: Blend the ingredients for the smoothie together in a blender the next day when you want to serve.
Combine: Pour the chia pudding into serving cups. Then pour the smoothie layer into the cup on top of the chia pudding. Garnish with the raspberries and hemp seeds.
